Winnipeg, Manitoba, July 2009 – Summer is a prime salad season, and the perfect time to experiment with healthy new ingredients. Proper nutrition is especially important during the summer when the body and mind can be compromised by excessive heat, as well as by strenuous outdoor activities.

Shelled Hemp Seed and Hemp Oil are two healthy, up-and-coming ingredients that have a pleasant nutty flavor and are easy to enjoy. Their incredible nutrition profile sets them apart from other salad ingredients. Below, Manitoba Harvest shares one of their favorite summer salad recipes – Fennel Kale Orange Hemp Salad by Kristen Suzanne of Kristen’s Raw. The most popular use of shelled hemp seed is sprinkled on top of a salad or tossed inside. This natural powerhouse has a soft texture, attractive sesame seed-like appearance and offers a nutty flavor similar to sunflower seeds or pine nuts.

Hemp oil is a delicious salad dressing base for those that make their own, or is an easy and nutritious supplement to a store-bought dressing. It has an attractive emerald green color due to its rich content of chlorophyll, a powerful antioxidant. Both of these are key ingredients in the Fennel Kale Orange Hemp Salad.

Nutrition experts tout hemp due to its balanced and high concentration of Omega-3 and Omega-6 Essential Fatty Acids, strong digestible protein profile, plentiful fiber, and abundance of vitamins and minerals. Hemp foods offer the richest vegetable source of the Omega 3 & 6 Essential Fatty Acids, and hemp’s overall protein content is comparable to soy beans without containing hormone inhibitors, and is higher than that found in nuts, other seeds, meats, dairy products, fish and poultry. “Chilling Out” with Fennel Kale Orange Hemp Salad

Makes 2-3 servings
Ingredients
1 small-medium bunch curly kale
2 tablespoons fresh lemon juice
2 tablespoons Manitoba Harvest Hemp Oil
3/4 teaspoon fresh orange zest
1/4 teaspoon Himalayan crystal salt
pinch nutmeg
1 cup fennel bulb, thinly sliced *
1 cup orange, peeled, seeded & chopped
8 kalamata olives, pitted & chopped
1 tablespoon Manitoba Harvest Shelled Hemp Seed
1 tablespoon fennel leaves, chopped

Directions
De-stem the kale. Tear apart the kale leaves (or use a knife and chop them) into bite-size pieces. Place the torn kale into a large bowl. Add lemon juice, hemp oil, orange zest, salt, and nutmeg. Take a minute and massage all of these ingredients together with your hands. Add the fennel, orange, olives, shelled hemp seeds, and fennel leaves, and gently toss to mix. Enjoy!
