| Beet and Corn Salad |

Ingredients:- 1 can sliced or diced beets, rinsed and drained - 1 cup fresh or frozen corn - 1/2 small white onion, minced - 1/4 cup fresh parsley, minced - 1/2 cucumber, diced - 1 teaspoon dried dill weed - 1 teaspoon garlic powder - 1/4 teaspoon black pepper, or to taste - 1/2 teaspoon salt, or to taste - 1 small lemon or 2 tablespoons lemon juice - 2 tablespoons red wine vinegar Directions: Mix all ingredients in bowl. Let sit for at least 30 minutes in the fridge. Stir again before serving. Serves: 2
